No Bake Cheesecake Bites with Fig Jam and Shortbread Cookie Crust

Boy, oh, boy do I love cheesecake. Actually not even just me…Sushil, Shay, the rest of the family, coworkers, friends. It’s so freakin’ good! Now, I know you can make cheesecake in the Instant Pot and I love that dang thing, but I have attempted any Instant Pot desserts. In life, I just don’t really bake. It’s a goal of mine to bake more often since I love baked goods so much, but here I wanted to use some of my favorite flavors to make an easy no bake cheesecake and I think we have a winner!

It’s almost SUPER BOWL!!! I actually get super excited about Super Bowl. Halftime shows, awesome commercials, SO many good eats, and oh yeah, football. LOL. While most people have their eyes glued to the screen I am usually hovering over the food. I like to bring something easy to a party like chili, or a dip, but today I’m stepping it up with these Chicken Tikka Masala Sliders!

Green Shakshuka with Olives and Capers

Let’s give you guys a recipe to keep you killin’ your New Year’s resolutions, but still give you all the warm and fuzzies during brunch! What better to do that than eat a lot of kale….right?!! Okay, that doesn’t all that warm, fuzzy, and satisfying. BUT blend all that kale together with bright, briny ingredients like olives, capers, and garlic, add a touch of curry powder and THEN serve it with runny eggs, and creamy yogurt and you’ve got a brunch meal that will hit all of your senses and keep you full until dinner!

Leftover Cheese Board Dutch Baby with Pear, Brie, and Walnuts and Mulled Wine Syrup

I haven’t posted a breakfast or brunch recipe in a long time so I took inspiration from what I like to do at night to create almost a hangover meal for you! So what do I like to do? Not waste any leftovers and wine, obviously! So if you’re wondering what you can do with that last glass of wine left in an open bottle, those few bites of fruit and cheese, and opened bag of nuts from hosting a party then I have the perfect solution for you! Make a pancake. Yep, just one….big…skillet pancake!

Instant Pot Easy Vegan Mushroom Soup with Tahini Drizzle

I didn’t make this to mimic the cream of mushroom canned thing, because I don’t like canned cream of mushroom at all! I just wanted something different to satisfy both me and my meat-loving husband (who also loves mushrooms). I used a bit of hummus to bring some more body to the soup and add a nice velvety texture without having to use heavy whipping cream or butter. I wouldn’t leave that out if I were you, and I do suggest going to vegetable broth since that will intensify the mushroom flavor. Oh, and the marinated mushrooms on top with the tahini drizzle is really what makes this 15 minutes dish FIRE!

Egg-free Coquito (Puerto Rican Eggnog)

Is it time for eggnog? It most certainly is, but what if you don’t really like eggnog? Like me. I like the flavors of eggnog, but something about eggnog just weirds me out. After all these years I just can’t get over it. SO I made a version of “eggnog” that I can sit and sip with a smile.

Easy Pull Apart Biscuit Bread with Herb Truffle Butter

Listen up, people! You will want to make this at your next party!!

I’ve had this black truffle butter that I picked up from Whole Foods before Thanksgiving. I used it to make these herby truffly smashed potatoes for our family. Originally I was going to post the recipe for those potatoes on the blog, but I decided to try out an easy app using the same flavors. We had so many dinner rolls leftover from Thanksgiving so that is how the idea for a biscuit pull apart bread evolved.

Holiday Mimosas with Fresh Cranberry Syrup

There are so, so, SO many holiday cocktails out there! A lot of them use cranberries and champagne, but I’m going to give you another recipe anyway! My version of a holiday mimosa has a fresh cranberry syrup (it’s more of a jam, but either way it’s SO good….even my 3 year old was licking it off of a spoon!) that is spiced with crystallized ginger and fresh rosemary.

So serve these up for Thanksgiving, Black Friday, Cyber Monday, Christmas Eve, Christmas Day, New Year’s Eve, New Year’s Day….okay, you get the point ;)

There aren’t too many ingredients that go into these delicious burgers, but I have to preface this blog post by saying that if you aren’t brown then you may not have all of these ingredients handy. Good news though…everything is available at your grocery store or on Amazon!

These have to be the most nutritious and more unique tasting veggie burgers I’ve eaten!

Homemade Pumpkin Hummus with Fried Sage

Anyway, back to pumpkin! It seems like pumpkin hummus is all the rage this year. It’s not a new concept, but maybe more people are coming around to the idea of pumpkin flavored things that aren’t pie. I’m not sure.

I made this recipe as easy as I could since you really don’t need to cook anything, BUT I had to give you one more layer of flavor and added fried sage. Sorry! Not really sorry, though.
