Coconut Curry Chicken Tacos with Mango Salsa and Lime Crema

I love fusing my Indian roots into our meals. My son doesn’t eat a lot of traditional Indian food, and my husband never craves it since we are fortunate enough to live close to family that cook Indian food all the time so I love finding new ways to get the flavors into easy weeknight meals. This recipe for Coconut Curry Chicken Tacos with Mango Salsa uses a premade Indian simmer sauce and comes together in about 30 minutes. It’s flavorful, perfect for a hot summer night, and such a fun take on taco night!

If you have a steak lover in the house, but don’t love making steak for said steak lover trust me…there are still options! My husband loves steak, but I don’t crave it the way he does and since I’m the one who usually cooks we don’t make it often. Well because it was just Father’s Day I wanted to make something that we all would enjoy eating so I got some great ribeye steak, dried porcini mushrooms, and gorgonzola cheese crumbles to make these incredible grilled steak bites!

Summer Salad Pizza with Fig and Prosciutto

Tell me you’ve had veggie pizza before? Not a pizza with vegetables on it, but the party pizza appetizer made from canned crescent rolls topped with cheese spread and raw veggies! It may sound weird (if you haven’t tried it), but it’s so good! I’ve taken the idea of “veggie pizza” and made it so easy to make, and modernized it a little too. It’s the more grown-up version of crescent roll pizza with dried figs and prosciutto

Southwest Shaved Brussels Sprouts Salad with Chili Lime Basil Dressing

I crave tacos..so much. I love the flavors, textures, and they are so satisfying! But in reality, I need to eat more salad. UGH. Okay, it’s not the worst thing in the world, but why can’t we just eat tacos every.single. day?!?! Since I’ve been craving the flavors I decided to make a yummy dressing with chilis, lime, and basil (so obsessed with basil right now!) and put that over veggies that are uber good for us.

Baked Caprese (Trader Joe's) Cauliflower Gnocchi with White Beans and Balsamic Drizzle

Yes, like probably millions of others I have an obsession with Trader Joe’s! They have so many great snacks and options for basically every dietary need, but there’s a debate over this low-carb frozen cauliflower gnocchi. Is it worth it? We’ve tried it a few times now, and I’m actually a fan. Especially when I get to doctor it up and make an easy, one pan, delicious Caprese Gnocchi with Balsamic Drizzle!

Gluten-Free Strawberry and Almond Butter Banana Bread

I’ve been working on a grain-free banana bread for a while now. This started when the Polar Vortex hit Chicago, and I used baking to use up some time while we were all cooped up in the house. I don’t really bake, but when I do I try to come up with these “healthy” variations on recipes. Sometimes it works and sometimes it doesn’t. I have found that when I bake with almond flour the end product is usually pretty good. It’s harder to mess up in my opinion. And I don’t feel as guilty eating it all! If you love peanut butter and jelly I think…no, I KNOW, you will love this Almond Butter and DOUBLE Strawberry Banana Bread!
