Baked Hummus Hot Dip with Sabauce Original Marinade

Who else is excited for FOOTBALL SEASON??? Personally, I get more excited about the food and socializing than the actual games. Judge me if you want, but it's true! I have some college friends who created this amazing marinade about a year and a half ago. Sabauce is reminiscent of tandoori spices, but already mixed into a base so that it will infuse whatever you are putting it on with bold flavors of chili powder, cumin, garlic, ginger, and a hint of lime.

S'mores Ice Cream Sandwiches with Nutella Ganache

For the Fourth of July Shay and I made this s'mores ice cream pie that I posted on IG stories, and you all went nuts over it! I got so many messages asking for the recipe. Well, there was no recipe. I just started putting all the components of s'mores into a baking tray and prayed that after it froze we would have a dessert to take to our friend's house. Let me tell you that it was insanely good!

Tequila Mules with Mango, Ginger, and Pink Peppercorns

This year I've been obsessed with putting all the Summer fruit into my meals...and cocktails! The rotation has been watermelon, mango, cherries, peaches, etc. mixed with corn, zucchini, tomatoes, and fresh herbs. When I partnered up with Fino tequila I knew I wanted to make a drink with mango, but a spicy margarita sounded a little basic and I made a paloma not too long ago. I wanted something special for Fino with the bold, spicy flavors that I love.

Grilled Paneer and Melon Summer Salad

When I said I did a thing...I really meant I did a thing. This "thing" to me is quite revolutionary! I would say just as revolutionary as Tandoori Grilled Cheese, and that is saying A LOT. So let's get to it. There is so much buzz around Greek halloumi cheese, but why is no one talking about using paneer just like halloumi??

Instant Pot Chilled Zucchini Soup with Spinach and Basil

I'm not gonna lie the heat can be too much some days! It's amazing when you're sitting out on a patio sipping on a few cold drinks, but when you are running around with a 2.5 year old or just getting stuff done...it's annoying! I go from an office that is freezing to my car where I start sweating bullets as soon as I sit my butt on black leather seats. Hmph!

That is why this chilled soup is glorious

Coconut Cooler

The more I've been reading about food trends it seems there is this push toward non-alcoholic drinks. You all know I love a cocktail myself, but I'm also huge on smoothies. I pack a lot into my smoothies on weekday mornings (fruit, spinach, protein powder, avocado, nut butter, etc.) so I can make it to lunch without craving a ton of unhealthy snacks. It's awesome how a drink can fill you up with so many nutrients! But the last few days I've been sipping on this light and refreshing coconut drink

Lightened Up Elotes Tortilla Cups

Elotes have become such a huge trend....there's elotes dip, elotes tacos, elotes pasta, and more! We love elotes!!! And for good reason...it's fresh, spicy, creamy, smokey, and that sweet corn...yummmm. There's always a little stand on the corner near my office that has great Mexican street corn. I would get it every day if I could, but my waistline can't afford it.

Easy Cuban Style Naan Pizza

A couple of weeks ago my little brother challenged me to make a Latin dish for the blog. I can definitely do Mexican/Tex-Mex but usually go out to get Latin. I almost did a twist on a Cuban sandwich until I saw a packet of mini naans and prepared pork carnitas at Costco...in basically the same section!!! I've been wanting to do a naan pizza since I started Mom Under Pressure so low and behold these Cubano Naan Pizzas have made it onto the blog! I figured since I was using so many store-bought ingredients that I would make something special to top these suckers.

Skillet Almond Butter Romesco Chicken Thighs

The great thing about getting a different produce box every week is that I don't have to really think about what to buy at the grocery store, and it keeps my creative juices flowing. I got 4 large red bell peppers from Imperfect Produce, and I couldn't stop thinking about making a some sort of sauce. I'm a sauce person...you all know that by now! I was thinking a creamy red pepper pasta sauce, but then I remembered I made romesco sauce YEARS ago. I also remember me loving it, and Sushil not LOL. I decided to give it another whirl anyways. This recipe uses a few things that were already in my pantry minus a couple ingredients that are traditionally used to make a romesco.

Roasted Asparagus Salad with Burrata and Everything Bagel Vinaigrette

So I just had to see what all the fuss was about. Yes, you know what I'm talking about....it's this Everything But The Bagel Seasoning from Trader Joe's. A ton of you have it sitting in your spice drawer, and I see it all over social media-- sprinkled over avocado toast, flavoring your hummus, on top of vegetables, and the list goes on. Well, I finally went out to get a bottle. Not me physically, but Sushil grabbed it from TJ's when he did the grocery run. Now, I could have made a fab avocado toast with this, and blasted it on the 'Gram, but you know me....

Fresh Pineapple and Cherry Overnight Oats

There has been a surplus of pineapple and cherry at my house which definitely makes it feel like SUMMER! Yes, Finally!!! Using fresh fruit to make a batch of overnight oats was the best idea...it's refeshing, cooling, sweet, satisfying, and delicious. Spooning into these in the morning puts an extra pep in my step!

Instant Pot Baby Back Ribs with an Amazing Fig Barbecue Sauce

My, oh, my am I so excited to share this recipe with you!!! My husband and I love us some BBQ ribs, and last year we made them a few times in the Instant Pot. Before this we did not attempt ribs at home, but this magic contraption makes it so easy! We didn't have a store-bought barbecue sauce at home so I came up with a version using a delicious fig spread from Divina Specialty, that is literally finger-lickin' good. Even I was surprised by how good it turned out! Like this stuff needs to be bottled! I can't wait to make another batch to use on all. the. things!!!!

Fig Jam Paloma

So if you know me than you know that I don't usually drink tequila. It's not because I don't love a good marg, it's more due to the fact that I had some crazy college nights involving tequila....and therefore some rough, ROUGH mornings. Yes, my fault. I'm not blaming anyone here ;) Well anyway, that changed last weekend!

Bright and Simple Yogurt Marinated Chicken Skewers with Peach Salsa

This recipe is another one inspired by my recent trip to India. I had some of the best chicken kebabs in my life at the Sai Palace Hotel in Mumbai!! I first ordered them when I was at dinner with my aunt. Now there are so many variations of kebabs on their menu, but she knows I have a low tolerance to spice (compared to probably every other brown person on this planet....except my husband, lol) and we picked Peshawari Chicken Kebabs.

Summertime Ginger Peach Smash

I'm starting a new theme here at Mom Under Pressure...cocktail pairing! I love using the fresh ingredients in my kitchen in different ways so I want to create a cocktail from the herbs, fruits, vegetables (is that weird?), etc. that I use in my meals. Since I had over two pounds of peaches from making peach salsa I made a puree to put into this bourbon cocktail. Making craft cocktails at home doesn't have to be hard and complicated. Hopefully these recipes inspire you to have more Happy Hours at home ;)
